Hey Natasha! I recommend pouring the lemon filling over the hot crust because otherwise, the cooled crust will lift up and “float” over the bars :( But the bars can come together really quickly, simply prep the crust, then whisk together the filling ingredients while the crust bakes. Pour the filling over, return to the oven and you’re done! It’s best to bake the whole bars one day in advance than trying to break up the process. Sorry! I hope these tips will help!

My little Eggroll was born in February and I just now feel like I am resurfacing. Same thing – I took a shower every day and jumped back into teaching, probably earlier than I should have, but I just wanted to stand over a pot of risotto, stirring and listening to an NPR pod cast and thinking my old, grown-up, non-poop-based thoughts. About two months in, my husband (or should I say, my new daughter) gave me that time. It was amazing. I haven’t looked back since. I might assemble dinner during the afternoon nap and write posts after 10 pm, but life is finally regaining balance.
