When you think of gelato, what flavor comes to mind first? Chocolate probably, pistachio, maybe? You might be a fan of fruity gelati, such as lemon or raspberry. I love all of these, but my gelato dreams—and those of many Italy lovers—are punctuated with scoops of coffee gelato.

Italy has an incredible coffee culture. The narrow streets of Rome and of all Italian cities, big and small, are lined with bars, coffee shops that often also sell pastries, snacks, and gelato. (Nope, bars in Italy are not the alcohol-serving kind!) Italians all have their favorite bar, and they often drink their morning coffee there, every day.

In Italy, you don’t settle into your local coffeeshop for hours on end, en tête-à-tête with your computer and a latte; you drink your morning espresso in seconds, standing at the bar, while exchanging a few words with the barrista or your neighbors. Coffeeshops are central to Italian social life, and so is coffee.

It should come as no surprise that one of Italy’s most famous desserts is coffee-based. Tiramisu is indeed a creamy ode to coffee, and to Italy itself. But probably second to tiramisu on the list of most renowned coffee-based Italian desserts is gelato al caffè. No gelato lineup in an Italian ice cream shop would ever be complete without coffee gelato—and my gelato-loving heart wouldn’t be content if I didn’t regularly churn a batch of homemade coffee gelato.

My coffee gelato has a silky-smooth texture, and the rich, aromatic flavor of freshly brewed coffee. A bowlful of this creamy treat is bound to please all coffee lovers, but I find that perhaps even people who don’t drink coffee also love this gelato: it has a truly comforting flavor that pleases everyone, even kids!

If you don’t or can’t have caffeine, no worries: you can make this coffee gelato with your favorite decaffeinated beans instead.


Helpful Tips for Making Coffee Gelato


Start with whole beans

Just as freshly brewed coffee is more aromatic when it’s made with freshly ground beans, coffee gelato is exponentially better when you make it with freshly ground beans—or should I say, freshly smashed beans. This coffee bean gelato is made with lightly crushed coffee beans, which slowly infuse the gelato custard overnight. The aroma this technique produces is richer and fuller and the flavor is smoother. Not to mention the texture, which doesn’t contain any coffee grit.

Use the freshest coffee beans—and the best quality you can find

Just as with any recipe in which one ingredient is central to the flavor of the dish, using the best and freshest coffee beans is key to producing the coffee gelato with the best, smoothest flavor. Coffee beans that are sold in grocery stores or national chain coffeeshops were roasted weeks ago, if not months.

Tasting a cup of coffee made with freshly roasted coffee beans can be revelatory. The flavor is bright, rich, and aromatic. The dusty, bitter notes older coffee can sometimes reveal are non-existent, and you discover the full spectrum of aroma coffee can offer.

Freshly roasted beans means beans that were roasted days ago, not months. If you know a coffeeshop that roasts its own beans in your neighborhood, let this coffee gelato be your excuse to pay them a visit. Ask them when their coffee beans were roasted: if they’re proud of their product, they won’t be shy about giving you an answer. If the coffeeshop has shelves of their products you can pick yourself, look closely at the bags: they should show a “roasted on” date. Use the coffee beans that were roasted the most recently.

Pick coffee beans with a rich, round flavor

These days, coffee is offered in such a wide range of flavors. I’m not talking about added flavors, but terroir flavors. Coffee beans that were grown in Costa Rica taste vastly different from those harvested in Ethiopia.

Many indie coffee producers now add keywords to their packagings to help customers pick a coffee that matches flavors they enjoy. Such keywords can range from “marmalade, nutmeg, delicate” to “molasses, chocolate, full-body.” If you’re visiting a local coffeeshop, don’t hesitate to ask for their advice: they’re the experts! Let them suggest coffee beans they think would work great in gelato form. It doesn’t have to be espresso beans—in fact, I would steer clear of dark roasts because they can have a harsher, more bitter flavor that wouldn’t translate well in a creamy gelato.

In this coffee gelato, rich, round, sweet flavors work best. Coffees with notes of toffee, pecan, milk chocolate, honey, caramel, or brown sugar would all be wonderful here.

Whichever coffee you pick, make sure it’s one you enjoy drinking. If it tastes great in your cup, it’s going to taste wonderful in your freshly churned homemade coffee gelato!

About the gelato base used in this recipe

To make coffee gelato, I use a Sicilian-style gelato base, which uses cornstarch instead of egg yolks as a thickening agent. This is my favorite gelato base and I think its silky mouthfeel is especially suited for a coffee-flavored gelato. If you prefer, you can also make this coffee gelato using a classic gelato base instead. Get the recipe for my go-to classic gelato base—simply make the custard as indicated and mix in the coffee beans while the custard is still hot. Let it cool to room temperature, then refrigerate overnight and churn as instructed in the recipe below.

How to Make Vegan Coffee Gelato

For the best vegan gelato flavor and texture, I suggest combining oat milk with coconut cream. Oat milk has a smooth, subtle flavor that is very close to that of dairy milk, whereas coconut cream delivers an unbelievably rich texture. Coconut milk and coconut cream both have quite a strong flavor, so using only coconut cream and combining it with oat milk creates the perfect balance.

Having said that, here’s how to substitute the original ingredients to make this vegan coffee gelato:

  • Replace the full quantity of cow’s milk (2 1/4 cups / 560 ml) with oat milk
  • Replace the full quantity of heavy cream (3/4 cup / 180 ml) with coconut cream

Be aware that the terms “coconut milk” and “coconut cream” are sometimes used interchangeably. To make sure you’re buying real coconut cream, choose a product with at least 20% fat content. The label of quality coconut cream products will always clearly indicate the fat content.

Alternatively, you can use other plant-based milks and cream, keeping the same milk-to-cream ratio for the best texture. Always make sure the vegan products you choose can withstand being heated and boiled to avoid the chocolate gelato turning grainy. Products labeled with the word “Barista” are sure picks: it means they can be heated without curdling.

How to Serve Coffee Gelato 

Last but not least, here’s an important serving tip. Because home freezers are set to very low temperatures, make sure you always take your coffee gelato out of the freezer 10 to 15 minutes before serving it. That will not only make it easier to serve—gelato’s lower fat content means it freezes rock hard—but also soften it to a consistency closer to what you would enjoy at a gelati bar, waking up the flavors and giving it the luxurious texture that is so easy to fall in love with.

Homemade Coffee Gelato (Gelato al Caffè)

  • In a medium saucepan, pour 1 cup (250 ml) of the milk and all of the cream. Warm over medium heat until it just starts to bubble around the edge (no need to bring it to a boil).
  • Meanwhile, in a small bowl, whisk the remaining 1 cup (250 ml) milk, sugar, cornstarch, and vanilla extract together. Remove the saucepan with the hot milk from the heat and whisk in the cornstarch mixture. Return the saucepan to medium heat and cook, stirring regularly, until the sugar is dissolved, and the mixture thickens slightly, 6 to 8 minutes.
  • Remove from the heat. Whisk in the crushed coffee beans. Cover the saucepan and let cool to room temperature.
  • Once the coffee gelato custard is at room temperature, pour into an airtight container. (Leave the coffee beans into the gelato custard at this point.) Refrigerate for at least 6 hours, or preferably overnight. The coffee gelato base must be very cold before churning: this will produce the smoothest, silkiest texture.
  • Strain the coffee gelato custard through a fine mesh strainer to eliminate all the bits and pieces of coffee beans. If the strainer you have on hand isn’t super fine, you can line a regular strainer with cheesecloth, then pass the custard through that instead.
  • Pour the coffee custard into the bowl of an ice cream maker and churn according to the manufacturer's instructions. Stop the machine when the coffee gelato is thick and icy but still easily spoonable.
  • STORAGE: Transfer the coffee gelato to an airtight container and freeze until firm, about two hours.
    Coffee gelato is at its creamiest and best if enjoyed within 2 weeks. Past that, some ice crystals will inevitably start forming (especially if the gelato is kept in the freezer section of a regular fridge, as opposed to a chest freezer) and the texture won't be quite as smooth. The gelato will still be perfectly edible for up to 2 months, but my advice is: enjoy it as quickly as possible after churning.
  • SERVING: Always take coffee gelato out to room temperature 20 minutes before serving to make it easier to scoop. This will also allow you to enjoy the treat at its ideal temperature and texture.
  • MAKE IT DAIRY FREE: Substitute lactose-free milk or oat milk for the regular milk, and lactose-free heavy cream or soy cream for the regular heavy cream.
  • MAKE IT VEGAN: Substitute oat milk for the regular milk, and soy or coconut cream for the regular heavy cream.
  • NOTE: To lightly crush the coffee beans, spread them over a cutting board and hit them with a rolling pin or the bottom of a glass bottle (such as a wine bottle.)

Desserts don’t need to be fussy and difficult to make to look elegant and taste delightfully rich. This easy Maple Panna Cotta is proof of that. Panna cotta is an Italian dessert that translates to “cooked cream.” The name is simple and the process to make it is, too: panna cotta is quite simply a sweetened cream that is thickened and set by gelatin.

I’ve been making panna cotta for years. It’s one of my go-to desserts to serve to guests and there are many reasons why I love making it for dinner parties: it’s super quick to make, requires very few ingredients, is versatile in flavor and make-ahead friendly. What’s not to like?

Maple Panna Cotta is a 5-ingredient recipe: you only need heavy cream, milk, maple syrup, gelatin, and vanilla extract to make it.

You can serve panna cotta so many different ways: you can flavor it with vanilla, citrus zest, liquor, or fruit compotes, garnish it with seasonal fruits or crunchy toppings, serve it in small glasses or ramekins, or unmold it to serving plates, for a different look. In short, panna cotta is effortlessly stylish and deliciously memorable.

But my favorite way to sweeten and flavor panna cotta is to make it with maple syrup instead of regular sugar. Maple syrup infuses the panna cotta cream with its aromatic, earthy flavor, and adds some depth to the rich creaminess of the dessert.

The beauty of maple panna cotta is that it’s delightful on its own, but it’s also delicious with a variety of fruits and crunchy toppings. A combination of flavors and textures really brings maple panna cotta to another level: simply spoon on some juicy berries and sprinkle it with crunchy nuts and you’ve got a dessert fit for special occasions.

Helpful tips for making maple panna cotta


Can I make maple panna cotta in advance?

Yes you can, and in fact, you should! Panna cotta needs to be refrigerated for several hours to set, so it’s best to make it at least a half-day in advance. You can refrigerate set maple panna cotta for up to 5 days. Always garnish it with the toppings of your choosing (if any!) right before serving.

I don’t have maple syrup. Can I use another sweetener instead?

This panna cotta truly is worth you seeking maple syrup! But if you can’t find it, yes, you can substitute honey or any variety of granulated sugar at a 1:1 ratio. If you use granulated sugar, make sure to stir the milk and cream mixture with the sugar over the heat for a few minutes to make sure it dissolves and is completely incorporated into the liquid.

Why does gelatin need to rest, or “bloom” before I use it?

The type of gelatin I use to make maple panna potta is a dry, grainy powder and it needs to be steeped into a liquid to rehydrate. This step is crucial to creating a super-smooth, creamy panna cotta. Although “blooming” might sound like a technical term (albeit an elegant-sounding one), blooming gelatin is actually super easy. All you need to do is to sprinkle the gelatin over a liquid and leave it to rest, without stirring, for about 5 minutes. After that resting period, you’ll mix in the hot liquid, which will allow the gelatin to fully dissolve and help you create that irresistibly wobbly panna cotta texture.

Can I use sheet gelatin instead of powdered gelatin?

Powdered gelatin is usually the easiest type of gelatin to find. The brand I use is Knox unflavored gelatin, and it is sold in all North American supermarkets. In Europe, gelatin sheets can be easier to find than powdered gelatin.

If you’ve got gelatin sheets on hand, you can use it to make maple panna cotta. For 1 packet of powdered gelatin (2 1/2 teaspoons), substitute 5 sheets, each measuring about 2-7/8″ x 8-1/2″ (7 cm x 11.5 cm). To rehydrate gelatin sheets, you need to steep them in cold water for 5 minutes. This means you can warm up all the milk and cream together, instead of setting aside 1/2 cup (125 ml) of the milk to bloom the gelatin. Once gelatin sheets are soft, drain and squeeze out excess water. Add to the hot milk and cream mixture and stir until fully dissolved.

How to make vegan panna cotta

It’s easy to make vegan panna cotta. Here’s how:

  • Substitute plant milk and cream for the regular varieties. I like to use a combination of oat milk and soy cream because they both have a smooth flavor that lets maple take center stage, but you can also use coconut cream.

So many different fruits go well with maple syrup. Use maple panna cotta as a blank canvas and vary the toppings according to the season:

  • Berries
  • Diced orange, mandarin, tangerine, or clementine
  • Apple, pear, mango, or peach compote
  • Any fruit coulis, such as rhubarb

Crunchy toppings also offer a delightful contrast to the creamy texture of maple panna cotta. Here are a few ideas:

  • Toasted nuts, chopped, such as pecans, walnuts, and pistachios
  • Crunchy cookie-like crumble (refer to my orange panna cotta for an easy, make-ahead crumble recipe)
  • Granola
  • Crumbled sablé cookies

You can also serve panna cotta with crunchy cookies or mini cakes on the side to turn it into an elegant plated dessert. Sablés, financiers, and madeleines make wonderful sidekicks to this maple panna cotta.

Ingredients

Toppings

  • Crushed toasted nuts, such as pecans or walnuts
  • Additional maple syrup, to drizzle
  • Fresh fruits (optional)

Instructions

  • Pour ½ cup (125 ml) of the milk into a large bowl. Sprinkle the gelatin over the milk and let rest for 5 minutes (do not mix—this step allows the gelatin to bloom).
  • In a saucepan, combine the rest of the milk (½ cup / 125 ml) with the heavy cream, maple syrup, and vanilla extract. Set over medium-high heat and stir until you reach a light simmer.
  • Pour the very hot milk and cream mixture over the gelatin and stir until the gelatin is completely dissolved.
  • Divide the maple panna cotta mixture between 8 small glasses, jars, bowls, or ramekins. Refrigerate at least 4 hours to set. (Do not cover while the maple panna cotta is hot because this will create condensation and the water will fall on the panna cotta when you uncover it.)
  • SERVING: Right before serving, top panna cotta with your choice of crunchy nuts and fresh fruits, along with an additional drizzle of maple syrup.
  • STORAGE: Cover cold maple panna cotta with plastic wrap and refrigerate for up to 5 days.

Lemon curd is one of my favorite citrus condiments. Everything about it makes me happy: its bright yellow color, its zippy, puckery flavor, and the fact that you can enjoy it from breakfast to dessert. 

A bit of lemon curd history: Lemon curd is a creamy fruit spread usually made with egg yolks, butter, sugar, lemon juice, and lemon zest. It’s an English condiment that dates back to the 19th century. Lemon curd was traditionally (and is still now) served with afternoon tea as an alternative to jams with scones, bread, and cake. It can also be used to fill pastries and tarts.

After making traditional lemon curd for years, I started experimenting with different variations to avoid using the butter usually required in traditional recipes (making it friendlier for my lactose-intolerant belly). After perfecting this completely butter-less lemon curd, I realized I didn’t miss the traditional, butter-laden variety at all. Everyone who tasted loved it too, not noticing the lack of extra calories—so I’ve never looked back.

This no-butter lemon curd is now my go-to lemon curd recipe. The use of a little cornstarch helps achieve the right silky consistency, and the addition of just a little cream leaves room for a slightly puckery taste—the hallmark of the bright condiment.

I always keep a jar of this no-butter lemon curd in the fridge and use it on anything and everything, from breakfast to dessert. I’m addicted, you see, and I think you’ll quickly become so, too.

Now, if you’re not very familiar with the condiment, here’s a bit of background information on why lemon curd is so delightful, and some helpful tips to learn how to make it at home.

Why is lemon curd called a “curd”?

In 19th century England, lemon “curd” was exactly that: curds were created by mixing acidic lemon juice into cream, which was then strained from the dairy whey through a cheesecloth. 

Over time, butter, eggs, and sugar replaced the cream to create the rich, velvety spread we know today. Modern lemon curd is made just like a custard, which is liquid (lemon juice) thickened by eggs.

What ingredients are used to make traditional lemon curd?

Traditional lemon curd is made with butter, eggs, and lemon juice. In traditional lemon curd, butter is used both as a thickener and to create a richer mouthfeel and flavor. In my no-butter lemon curd recipe, I achieve the same velvety texture with a spoonful of cornstarch and a bit of heavy cream. This allows me to completely leave the butter out of the equation, creating a better-for-you condiment in the process.

Can you add more sugar to lemon curd?

Lemon curd is meant to walk that fine line between too-acidic and just-sweet-enough. That said, the sweetness levels of lemons vary. I do understand that some people might enjoy the aromatic quality of lemon curd but not its puckery acidity. You can add up to 2 tbsp (24 g) granulated sugar to this no-butter lemon curd recipe to round off its edges.

But if you are looking for a sweeter, less acidic citrus curd, I recommend using Meyer lemons, which are much sweeter than regular lemons, or swapping in a bit of orange, mandarin, or clementine juice for part of the lemon juice required in the recipe. This will naturally sweeten the curd without adding more sugar.

How long can I store no-butter lemon curd?

You can refrigerate no-butter lemon curd in an airtight jar for up to 5 days.

Can I freeze no-butter lemon curd?

You can’t freeze this no-butter lemon curd. This curd is cooked like a pastry cream that is stabilized with cornstarch. If you freeze no-butter lemon curd, it will thaw to a completely different texture. That rich, smooth texture will be replaced by a yucky, grainy one because the fats and proteins will have separated during the freezing/thawing process. That silky smooth texture you want for your pastries will be gone. This is not something you can fix. So please, do not freeze this no-butter lemon curd!

Can I use other citrus fruits to make lemon curd? 

Of course, you can! You can use any citrus fruit to make curd. My favorite alternatives are clementines and mandarins because they’re so aromatic! Of course, oranges are much sweeter than lemons, so if you’re swapping oranges for lemons, you’ll need to adjust the sugar quantity used in the curd, but also expect a much tamer, sweeter condiment. Those who specifically love the tartness of lemon curd will truly enjoy using limes or grapefruit! You can also mix citrus fruits and make curd with lemons and clementines, for example.

Approximate citrus fruit juice to sugar ratios to make citrus curds

If you’re swapping out lemons to use other varieties of citrus fruits in this no-butter lemon curd recipe, you’ll need to adjust the sugar content. I’ve made nearly every variety of citrus curds, so here are the citrus fruit juice to sugar ratios I’ve created.

The number of citrus fruits indicated below should provide the amount of juice required in the recipe. Of course, the juiciness of citrus fruits varies widely according to provenance and season, so whichever citrus fruits you use, make sure to always reach the total amount of 1/2 cup (125 ml) strained juice required in the recipe.

  • 1 grapefruit, 4 lemons, 6 limes, or 18-24 key limes: use 1/2 cup (100 g) granulated sugar
  • 6 Meyer lemons: use 1/3 cup (70 g) granulated sugar
  • 3 oranges (blood, Cara Cara, or Navel) or 8 mandarins or clementines: use 1/4 cup (50 g) granulated sugar
  • 1/2 cup (125 ml) bottled yuzu juice: use 1/2 cup (100 g) granulated sugar

You can also quite simply enjoy no-butter lemon curd straight out of the jar, by the spoonful! However you choose to serve lemon curd, you can’t go wrong with this wonderfully versatile condiment.

No-Butter Lemon Curd Recipe

Ingredients

  • 1 tbsp cornstarch
  • 1 tbsp water
  • ¾ cup freshly squeezed lemon juice (about 4 lemons)
  • ½ cup granulated sugar
  • 2 large eggs
  • cup heavy cream (35% m.f., see note, below, for a dairy-free alternative)

Instructions

  • In a small bowl, dissolve the cornstarch in the water. Set aside.
  • In a saucepan set over medium heat, whisk the lemon juice and sugar together until the sugar is completely dissolved (the mixture doesn’t need to boil.) Remove from the heat and let cool until warm. In a small bowl, whisk the eggs together, and gradually pour into the lemon-sugar syrup, whisking constantly to incorporate. Place the saucepan back over medium heat. Add the cornstarch mixture and whisk to incorporate.
  • Continue whisking until the mixture is thick like a custard or a soft pudding (make sure to whisk constantly so the mixture doesn’t stick to the bottom of the pan and burn.) Remove from the heat. Whisk in the regular heavy cream. If you're expecting a brighter yellow hue, feel free to add a drop of yellow food coloring, but I prefer my lemon curd to retain its natural soft yellow shade.
  • STORAGE: Transfer to an airtight jar and refrigerate until completely cold. The lemon curd will keep for up to a week.
  • MAKE IT LACTOSE FREE OR DAIRY-FREE: Substitute lactose-free heavy cream or soy cream for the regular heavy cream.
